Scottish Recipe 002 - Porridge

Ingredients:

Per Person ImperialMetricAmerican
Water1 pint500 ml2 1/2 cups
Medium oatmeal2 tbsp2 tbsp2 tbsp
Large pinch of salt    


Method: Bring the water to the boil in a large, heavy saucepan. Sprinkle in the oatmeal and salt, stirring with a wooden spoon to prevent lumps. Continue to boil and stir constantly for about 5 minutes or until the oatmeal is absorbing the water. Lower the heat, cover and simmer for at least 30 minutes, stirring frequently. Porridge should be of a good pouring consistency, so add more boiling water whenever necessary.

Note: The making of porridge varies a great dealaccording to individual preference. Most Scots will sprinkle it with salt before eating. For variety, serve with milk and brown sugar, golden syrup, cream or grated nutmeg.

Some folk find porridge more digestible if the oatmeal is soaked in the water overnight.
